Bronze-drawn pasta from Campania for ragù, Genovese and oven dishes. Candele are long, smooth hollow tubes whose name means “candles”. In Naples they are traditionally broken by hand before cooking. Each family decides how long the pieces will be.
Grania uses 100% Italian durum wheat for the candele. The dough is pulled through bronze molds that give the pasta a rough, porous surface. This means that the sauce sticks to the outside of the noodle and at the same time gets into the inside of the tube.
The candele are then slowly dried in static drying cells made of fir wood at a maximum of 50 °C. A careful production for pasta with a strong bite.

The Grania pasta factory is located in Castello di Cisterna near Naples, at the foot of Monte Somma, which is part of the Vesuvius massif. The Fornaro family founded the company in 2004 after 35 years of experience in aerospace engineering.
Under the brand Le Gemme del Vesuvio Grania produces over 60 pasta formats. Daily production is limited to a maximum of three tons. Bronze molds and slow drying characterize the production of this pasta from Campania.
